lAS VEGAS — The 2024 Winter Fancy Food Show saw more than 1,200 global and domestic specialty food and beverage makers showcase their newest products Jan. 21-23 in Las Vegas. The $194 billion specialty food market targets consumers interested in premium products, often made in small batches, and the category was estimated to reach $207 billion in sales by the end of 2023.

The Specialty Food Association (SFA) Trendspotter panel predicted maximizing pleasure and minimizing stress would be big in 2024.

 “Maximizing pleasure — in the forms of simple ingredients to global flavors to upscaling the everyday — and minimizing stress, whether that means slowing down, seeking convenience or value, helping to address environmental worries, or finding ways to boost health and mood, are all reflected in the emerging and continuing trends we expect to impact store shelves and restaurant menus in the coming year,” said Denise Purcell, vice president of resource development, SFA.

Other trends sweeping the show floor included snack and breakfast innovation.

“With annual sales of $6.1 billion, crunchy snacks are the top-selling specialty food category,” said Purcell in an interview with Food Business News. “We are seeing new grains and more seeds being explored in this space, along with new shapes and unique formats.”
